For the love of food

Food and eating has always been an important part of who I am. I grew up in a home where my dad was a chef who prioritized eating fresh and healthy foods. His influence developed my love of cooking.
Although I love eating out and trying new places my favourite thing is making food at home. I love taking a recipe and making it my own. It wasn’t until my 20’s that I started to have issues with my diet and digestion. Stress and food sensitivities were major factor in, what I was later diagnosed with, FODMAPS IBS and Hashimotos. I had to start restricting what I ate along with having blood and other types of tests to figure out what foods I was sensitive to. It has been a long and challenging process that has ended up with several trips to the hospital, doctors and specialists. It continues to flare up when I become careless about what I'm eating and/or stress levels increase.
Over the last three years I have shifted from a meat centred, to vegetarian, to almost completely vegan diet not only for my own health (dairy was really messing me up) but for my love of animals. I just couldn't continue eating them knowing the abuses they suffer for us to consume them. For me moving towards a plant-based diet has definitely been a transition. Having food sensitivities (especially to cruciferous vegetables- Brussels Sprouts, Broccoli, Cauliflower, Cabbage etc) has made it a bit more challenging but over the last couple of years I have learned to modify recipes to be plant-based and diet friendly.
